A quarter cut of our traditional handmade farmhouse cheese.  Carrick was a Silver Medal Winner at the 2018 Artisan Cheese Awards and was sold out for much of that year. Matured for 9 months Carrick has a crumbly curd and a clean, fresh flavour.  The rind gives the cheese its earthy character.

All our cheeses are made with vegetarian rennet with traditional methods used throughout. The cheeses are matured on wooden shelves and are turned weekly by our knowledgeable staff.

Cheese is cut to order to maximise shelf life. Carrick is best consumed within 4 weeks of cutting.

Your cheese order will be delivered in Woolcool bags, a system of eco-friendly insulated packaging made from sheep’s wool. These special cool bags keep our cheeses below  5oC  for 48 hours so that they reach you perfectly chilled and ready to enjoy. Cheeses are sent using a next day delivery courier service, however please bear in mind that very occasionally delivery can be delayed. The Sorba-freeze ice packs we use are reusable, they can be dehydrated (on a radiator) and rehydrated with water and refrozen.
