Dhoon (500g)

A gentle, slightly crumbly cheese
Description

Spring time on the farm is a time of optimism and new beginnings, and as we emerged from this year's long, dark and wet winter - after the snowdrops but before the dandelions - we wanted to create a new cheese to represent that fresh start, and add something a little different to our range.

Everything about making this cheese was gentler than usual. The curds were scalded to a lower temperature, stirred for a shorter time and the cheeses pressed more lightly. The result, as you might expect, at four months old, is a softer, slightly crumbly cheese, with a lovely, clean flavour. Conceived in winter, made and matured in spring, and now ready to eat as a perfect summer cheese, it's been named after a popular sandy beach not far from the farm. 

Dhoon is handmade using vegetarian rennet and raw, organic milk from our cow with calf dairy farm. Photo for illustrative purposes.  Cheese is cut to order to maximise shelf life. Dhoon is best eaten within seven weeks of cutting.

Your cheese order will be delivered in Woolcool packaging, a system of eco-friendly insulated packaging made from sheep’s wool. This packaging keeps our cheeses below  5oC  for 48 hours so that they reach you perfectly chilled and ready to enjoy. Cheeses are sent using a next day delivery courier service, however occasionally delivery can be delayed. If you receive your cheese a day later than expected, the cheese will be absolutely fine. The Sorba-freeze ice packs we use are reusable, they can be dehydrated (on a radiator) and rehydrated with water and refrozen.

We dispatch orders once a week, on Tuesdays. For same week delivery, please place your order by 8am on Monday.

You can schedule your delivery in advance, although some products, such as Garnie, have restricted dispatch windows.
